What Is Organic Potato Starch?
Potato Starch is a larger-grained starch that binds at low temperatures when compared to wheat or corn starches. Sauces thickened with root starches like potato, arrowroot or tapioca are silkier and softer than their equivalent made with grain based flours.
Potato starch can be dissolved in water and added as a thickener, it will tolerate higher temperatures than corn starch when used as a thickener and works especially well in gravy for this purpose. It attracts and binds water, producing a moist loaf with a particularly good shelf life and also works great in pancake and waffle recipes.
Its worth bearing in mind that root starches don't perform as well as grain starches if your recipe calls for a long cook; in these situations its best used for thickening sauces towards the end of cooking.
Why Should I Get Organic Potato Starch?
Well firstly Potato Starch is a "Resistant Starch", these are starches found in common foods like potatoes, beans, rice and green bananas. These starches resist being digested and therefore make it all the way to the large intestine. In this way they end up as food for your digestive systems good bacteria.
This is not quite the same as being a pro-biotic, but it is a close second. Officially these are designated "Pre-biotics" and together, both are required to maintain the healthy balance of your intestinal flora.

Potato Starch is typically used as a thickener & stabiliser in foods such as puddings, custards, soups, sauces, gravies, pie fillings, & salad dressings. It is best to mix potato starch with fluid before it is added to recipes.
Storage Instructions:
Store in a cool dry place, away from direct sunlight, heat and damp. Reseal when no longer in use or move to an airtight container.
